My friend Tee recently celebrated being 5 years cancer free! She had a big PINK party to celebrate with all her family and friends. I was honored to be able to make the sweet treats for the big event. Tee’s favorite thing ever are cake pops! I however, have a love/hate relationship with them. But…since this party was (kinda) a big deal, 😉 I wanted to muster up enough patience and make some for her. Surprisingly, they were actually fun to make this time around! It probably helped that they were pink. 🙂 Because, pink makes me happy! I made a 3 tiered centerpiece cake for the dessert table, and pink ribbon cupcakes.
I met Tee when we were moving into our new house almost 2 years ago. Both having 2 little ones, we hit it off right away. Anyway, a few months after we moved in, I asked Tee if she knew someone who had breast cancer (because the girl was ALWAYS decked out in pink gear!) She said, “Yes. Me.” I was so shocked, how could I not have known this about her…we hang out all the time! She is SO young! She has little kids! OMG, how does this happen? Turns out, she has quite an amazing story. At 30 years old, she got the news she had breast cancer. She also received the news she was pregnant with their first baby during her pre-op physical. She was pregnant, and she had cancer. I can’t imagine the mix of emotions that brought to them. In the end, her little miracle baby, Colton (now 4!) was born and she’s a 5 year survivor of breast cancer at 36. I didn’t know Tee during her journey, but am so glad to know her now and to have learned about her fight. I can’t imagine what it took for her to stay strong during that time. She is truly an inspiration to many and is one of the strongest women I know. I’m honored to be a part of “Tee’s Team” and to walk with her again next month at the Breast Cancer Walk.
So here’s to Tee, for kicking that “mooch” to the curb and being 5 years cancer free!
Gabriel’s Mommy did a great job planning for his big 1st birthday celebration! She knew she wanted lots of sweet treats for their guests to enjoy, so we did a cake, cake pops and cupcakes! Her set up was amazing…gumballs, candy, cake…what more could a kid ask for at his birthday party?!

This cake was designed for Stevie, who celebrated her 2nd birthday yesterday! It doesn’t seem like a whole year has gone by since I made her Winnie the Pooh cupcakes and beehive cake! A lot has changed for Stevie’s family since then…she became a big sister! Her Mommy and Daddy got her a little art table for her birthday, so they planned the party around it. The design was left up to me (which I love!) and I came up with a splatter painted cake, complete with an art easel, painter’s palette and paintbrush…all made by hand from fondant. This is the first Mimi’s cake to travel out of state…Stevie and her family are in Omaha…her Grandma picked it up and made the delivery. 🙂

Jack (3) and Charlotte (1) celebrated their birthdays together over the weekend with a Superhero party! Their Mom wanted to be sure that the cake was still somewhat girly, for Charlotte. So I used their invitation as inspiration in my design, using the red and white polka dot tier for Charlotte, and the city lights bottom tier for Jack. I also added the little red bows for a little more “girly” flair. Charlie has a food allergy, so her Mom made her a special cake and I provided a special “SMASH” plaque to dress up her cake.

Ok, so I literally know nothing about the Minecraft craze…so I definitely took to the internet for some ideas. In the process of making this cake, I kept asking my daughter if it looked like a Minecraft cake yet (she has played it with my nephew) and she kept saying no…she is always brutally honest…Ha! Finally, she said, “Hey, that looks like a creeper.” So that’s when I finally felt a sense of relief…having no clue what a “creeper” was. In the end, she said it looked just like Minecraft, and I was relieved! Both tiers were chocolate cake, filled with vanilla buttercream, iced in chocolate ganache, then covered in fondant…it was heavy!!

I was so excited to make these cakes for our friends, Pippa (3) and Alfie (1)! I was told the thing Pippa was most excited about for her party, was her WonderWoman cake…so the pressure was on! 🙂 It turned out great, and so did little Alfie’s Superman cake. As you can tell in the pics below, he enjoyed it!
